This stuffed pork chops recipes has a nice touch of elegance, but it is quick, easy, and tasty! This recipe is simple enough to make quickly after work and impressive enough to share with weekend guests. Pork is a very versatile meat that can help mix up the meal time routine.

Kale and Bacon Stuffed Pork Loin Chops Recipe

4 – 1” thick pork loin chops
1 bunch of kale
6 strips of bacon
2 Tablespoon balsamic vinegar

Cut pocket in chops for the stuffing. Cook bacon in cast iron skillet till crisp. De-stem and chop kale into ¼ inch pieces, saute in skillet with leftover bacon drippings. When just about done, crumble in bacon, add balsamic vinegar, remove from heat, and let cool. When stuffing is cool, stuff chops, season lightly with salt and pepper, sear on both sides in cast iron skillet with bacon fat. Finish in oven to desired temperature. Serve with your favorite sides!
