For best results when preparing fresh pork, use a meat thermometer, cook to 145 degrees (internal temperature) and let the pork “rest” for three minutes before cutting. Pork cooked properly to 145° will have a slight blush of pink in the center and will be tender, juicy and flavorful!
Cook pork about 20 minutes per pound. Correctly cooked pork is juicy, tender, and slightly pink in the center.
